La Coffea Arabica

La Coffea Arabica, la più pregiata, rappresenta i 3/4 della produzione mondiale di caffè. Nata nelle regioni montuose dell’Etiopia, sensibile al caldo e all’umido, l’Arabica cresce ad altitudini superiori ai 900 metri: più alta la quota, migliori saranno le qualità organolettiche del chicco di caffè tostato. I caffè Arabica sono molto profumati, dolci, rotondi, leggermente acidi e spesso cioccolatosi, con una crema nocciola chiaro tendente al rossiccio e una gradevole punta di amaro.

Coffea Arabica, the most valuable, accounts for three-four of the world’s coffee production. Born in the mountainous regions of Ethiopia, sensitive to heat and humid, Arabica grows at altitudes above 900 meters: the higher the altitude, the better the sensory qualities of the roasted coffee bean. Arabica coffees are very fragrant, sweet, round, slightly acidic and often chocolatey, with a light reddish hazelnut cream and a pleasant hint of bitterness.

La Coffea Robusta

La Robusta, come dice il suo nome, resiste bene al clima caldo e ai parassiti. Diffusa nei bassopiani tropicali, cresce anche a 200/300 metri, in zone più agevoli da raggiungere e dove è più facile gestire una piantagione. I caffè Robusta sono più spigolosi, astringenti, poco profumati e più amari, con una crema marrone tendente al grigio.

The Robusta, as its name says, resists well the warm climate and parasites. Widespread in tropical lowlands, it also grows to 200/300 meters, in easier areas to reach and where it is easier to manage a plantation. Robusta coffees are more angular, astringent, uncentrated and more bitter, with a brown cream tending to gray.

Questo caffè Barricato proveniente dalla regione di Caldas in Colombia viene coltivato ad un’altitudine compresa tra i 1350 e i 1470 metri. La varietà Castillo, di questo caffè particolarissimo viene raccolta a mano da settembre a dicembre quando le ciliegie del caffè sono molto mature, una volta spolpate e lavate vengono messe a fermentare fino all’ottenimento della giusta umidità, è a questo punto che il caffè viene messo all’interno di barrique in cui è stato invecchiato il rum per almeno 8 anni. Dopo circa tre mesi di maturazione, con intervalli regolari in cui viene prelevato dei campioni per le analisi, si ottiene un caffè dall’aroma e gusto del Rum.

This Barricaded coffee from the Caldas region of Colombia is grown at an altitude of between 1350 and 1470 meters. The Castillo variety, of this very particular coffee is harvested by hand from September to December when the coffee cherries are very ripe, once dusted and washed are put to ferment until the right moisture is obtained, it is at this point that the coffee is put inside barrels in which the rum has been aged for at least 8 years. After about three months of maturation, with regular intervals in which samples are taken for analysis, you get a coffee from the aroma and taste of Rum.

Il caffè della Giamaica che nasce ad altitudini di circa 2000 metri, è semplicemente il caffè più buono del mondo. E Wallenford Estate è nell’eccellenza, il cru che rappresenta la perfezione. Aroma intenso, gusto intenso e avvolgente, eccezionalmente ricco di sapori, morbido e dolce, equilibrato sul palato, con persistenza incredibilmente prolungata.

Among the factors that make a coffee valuable, there are the distance from the sea and the altitude, the higher a café is and close to the sea, the more valuable it is. Jamaica’s coffee, which is born at altitudes of about 2000 meters, is simply the best coffee in the world. And Wallenford Estate is in excellence, the cru that represents perfection. Espresso Giada Kopi Luwak  30€

Il Caffè più caro del mondo nasce nelle isole indonesiane di Sumatra, Giava e Sulawesi e ne viene prodotto solo poche decine di chili all’anno. La sua esclusività è data da un marsupiale chiamato in indonesiano Luwak che arrampicandosi sugli alberi di caffè ne mangia i frutti maturi. Le bacche rosse del caffè, ingoiate vengono successivamente digerite nello stomaco e i succhi gastrici, ricchi di enzimi particolarmente zuccherini, tostano naturalmente i chicchi. Una volta espulsi, questi vengono raccolti e venduti come una vera prelibatezza. Il caffè ha un gusto forte e complesso con retrogusto di caramello e note di cioccolato.

The world’s most expensive coffee is born in the Indonesian islands of Sumatra, Java and Sulawesi and is produced only a few tens of kilos a year. Its exclusivity is given by a marsupial called in Indonesian Luwak that climbing on coffee trees eats its ripe fruits. The red berries of the coffee, swallowed are then digested in the stomach and the gastric juices, rich in particularly sugary enzymes, naturally roast the grains. Once expelled, these are collected and sold as a real delicacy. Coffee has a strong and complex taste with caramel aftertaste and chocolate notes.
